- 225 g of Fusilli Pasta
- 400 g of Courgettes
- 100 g of Red Pepper
- 100 g of Yellow Pepper
- 75 g of Red Onion
- 50 g of Pitted Olives
- 15 g of Basil
- 2 Tbsp. (30 ml) of Olive Oil
- 2 Tbsp. (30 ml) of Hellmann's Original Mayonnaise
- 2 Tbsp. (30 ml) of Balsamic Vinegar
- Cook the pasta until it is al dente, and then drain.
- Preheat the oven to 200°C.
- Cut the vegetables into pieces and place them in a roasting tray and toss with 1 Tbsp. 15 ml of olive oil and season with salt and black pepper.
- Roast, stirring once, for 25 minutes or until vegetables are cooked.
- Combine the cooked vegetables with the remaining ingredients in large bowl.
- Serve immediately or cover and refrigerate until ready to serve.
- Great with grilled meat or fish.
