Pasta Salad With Roasted Vegetables

Cook Time: 25 minutes

  • 225 g of Fusilli Pasta
  • 400 g of Courgettes 
  • 100 g of Red Pepper 
  • 100 g of Yellow Pepper 
  • 75 g of Red Onion 
  • 50 g of Pitted Olives
  • 15 g of Basil
  • 2 Tbsp. (30 ml) of Olive Oil
  • 2 Tbsp. (30 ml) of Hellmann's Original Mayonnaise
  • 2 Tbsp. (30 ml) of Balsamic Vinegar
  1. Cook the pasta until it is al dente, and then drain.
  2. Preheat the oven to 200°C.
  3. Cut the vegetables into pieces and place them in a roasting tray and toss with 1 Tbsp. 15 ml of olive oil and season with salt and black pepper.
  4. Roast, stirring once, for 25 minutes or until vegetables are cooked. 
  5. Combine the cooked vegetables with the remaining ingredients in large bowl.
  6. Serve immediately or cover and refrigerate until ready to serve.
  7. Great with grilled meat or fish.
