Ingredients
- 4 Eggs
- 2 Tbsp. (30ml) of Hellmann's Light Mayonnaise
- 1/2 of a Red Pepper
- 1/2 a Courgette
- 1/2 of a Small Aubergine
- 2 Tbsp. (30ml) of Oil
Directions
- Cut the vegetables into cubes.
- Sauté the vegetables in a frying pan with the oil.
- When cooked, set aside.
- In a bowl, beat the eggs and whisk in Hellmann's Light Mayonnaise.
- Add the vegetables to the egg mixture and mix well.
- Heat the frying pan and pour in the mixture.
- Cook the omelette until set and cooked through to a nice golden colour.
