Vegetarian Omelette

Cook Time: 15 minutes


  • 4 Eggs
  • 2 Tbsp. (30ml) of Hellmann's Light Mayonnaise
  • 1/2 of a Red Pepper
  • 1/2 a Courgette
  • 1/2 of a Small Aubergine
  • 2 Tbsp. (30ml) of Oil


  1. Cut the vegetables into cubes. 
  2. Sauté the vegetables in a frying pan with the oil. 
  3. When cooked, set aside.
  4. In a bowl, beat the eggs and whisk in Hellmann's Light Mayonnaise. 
  5. Add the vegetables to the egg mixture and mix well.
  6. Heat the frying pan and pour in the mixture. 
  7. Cook the omelette until set and cooked through to a nice golden colour.
