- 500 g of Baby Potatoes
- 4 Tbsp. (60 ml) of Hellmann’s Original Mayonnaise
- 4 Tbsp. (60 ml) of Low Fat Natural Yogurt
- 1 Tbsp. (15 ml) Rajah Mild & Spicy Curry Powder
- 1 Lemon, zest and juice
- 1 Tbsp. (15 ml) Mango Chutney
- 1 Ripe Mango, sliced
- 1 Bunch of Spring Onions
- Fresh Coriander, finely chopped
- Fresh Mint, finely chopped
- Cook the potatoes in boiling water for 15 to 20 minutes, drain and set aside to cool slightly.
- In a large bowl mix together the Hellmann’s Original Mayonnaise, yogurt, curry powder, lemon zest and juice, chutney and mango.
- Add the potatoes to the bowl and stir in well.
- Season with pepper.
- Add the spring onion slices, coriander and mint, mix well and serve.
