Warm Potato Salad

Serves: 4 
Prep Time: 10 minutes
Cook Time: 20 minutes

Ingredients:
  • 500 g of Baby Potatoes
  • 4 Tbsp. (60 ml) of Hellmann’s Original Mayonnaise
  • 4 Tbsp. (60 ml) of Low Fat Natural Yogurt
  • 1 Tbsp. (15 ml) Rajah Mild & Spicy Curry Powder
  • 1 Lemon, zest and juice
  • 1 Tbsp. (15 ml) Mango Chutney
  • 1 Ripe Mango, sliced
  • 1 Bunch of Spring Onions
  • Fresh Coriander, finely chopped
  • Fresh Mint, finely chopped
Directions
  1. Cook the potatoes in boiling water for 15 to 20 minutes, drain and set aside to cool slightly.
  2. In a large bowl mix together the Hellmann’s Original Mayonnaise, yogurt, curry powder, lemon zest and juice, chutney and mango.
  3. Add the potatoes to the bowl and stir in well. 
  4. Season with pepper.
  5. Add the spring onion slices, coriander and mint, mix well and serve.
